Our Favorite Holiday Cookie Recipe & the Appliances we love to use...

For years our family has always combined Holiday Cooking and Sears Appliances.  We love to bake!  We bake pies, cookies, cakes, breads, any and all desserts you can think of. And how could we not do this without using our awesome Kenmore Stove we bought last year from Sears!  It cooks everything evenly and when we set it, we know that you will be ready at said time.

Our all time favorite recipe to bake every year is our "Pistachio Pudding Cookies."  They are super delicious and the cookies being green adds to the holiday theme we strive for.  I remember growing up and so looking forward to baking these with my Mom and now I get to do this with my children.

With this recipe you can either use a whisk to mix or for faster results, use the KitchenAid Mixer which can also be found at Sears.  I received this mixer for my Bridal Shower and use it for everything!  It sits on my kitchen counter all year long.




PISTACHIO PUDDING COOKIES


2 1/4 c. unsifted all purpose flour
1 tsp. baking soda
1 c. butter, well softened
1/4 c. granulated white sugar
3/4 c. brownulated light brown sugar
1/2 tsp. vanilla
1/2 tsp. almond extract
1 (4 oz.) pkg. pistachio instant pudding (used dry)
2 eggs
1 (12 oz.) pkg. butterscotch morsels
1 c. chopped walnuts
Few drops green food coloring (opt.)

Mix flour and baking soda in medium bowl. Combine butter, both sugars, both extracts and instant pudding powder in large mixing bowl. Beat until smooth. Beat in eggs, one at a time. Gradually stir in flour mixture. Stir in morsels and nuts. Batter will be very stiff; mix well with floured hands. Cover bowl; chill several hours or overnight for easier shaping. Form into smooth balls by teaspoonfuls. Place 2" apart on ungreased cookie sheets. Bake at 375 degrees for 8 to 10 minutes. Do not overbake. If desired, drizzle with confectioners' sugar icing mixed with a few drops green food coloring.

I will definately have to snag your recipe and try it out LOL! A lady I used to work with made this dessert dish with pistachio pudding in it and I was hesitant about trying it simply b/c of the color LOL! Boyyyyy am I GLAD I did! It's kind of like dirt pudding but with pistachio pudding :)

That is now my hubby's specialty! Him and my 3 children, who were also VERY hesitant about trying it, can't get enough!

All it consists of is 1 pkg of oreo cookies crushed up and placed on the bottom of a cake pan. Enough so that the bottom is completely covered. Then just add the pistachio pudding on top of the cookies let it set then top with a layer of whipped cream and spinkle on some of the crushed up oreo's if you wish to finish it off :)
